Veg Fried Rice

 

Ingredients

2 tbsp – garlic
3 cups – rice
3 tbsp – oil
2 tsp – green chillies
1/2 cup – sliced spring onions
1/4 cup – spring onion
3/4 cup – mixed vegetables ( French beans and carrots)
1/2 tsp – soy sauce
1/2 tsp – vinegar
Salt to taste

 

Method

1) Heat the oil in a broad non-stick pan, add the garlic and green chilies and sauté (lightly fried in butter or fat, pan-fried) on a slim flame for 3 minutes or till the garlic turns brown in color.

2) Add the spring onion whites and sauté (lightly fried in butter or fat, pan-fried) on a medium flame for 2 minute.

3) Add the spring onion greens and sauté (lightly fried in butter or fat, pan-fried) on a medium flame for a few seconds.

4) Add the mixed vegetables, and sauté (lightly fried in butter or fat, pan-fried) on a medium flame for 1 minute.

5) Add the rice, soya sauce, vinegar and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.

6) Serve hot garnished with spring onion greens.
